The white powdery coating on dried figs is natural sugar crystallization, which forms as the fruit's natural sugars come to the surface and dry out. This process happens because figs have a high natural sugar content, and when they lose moisture, some sugars crystallize on the surface, creating a light white coating. It’s perfectly safe to eat and doesn't affect the fig's quality or taste.

If you prefer to remove it, you can rinse the figs lightly with water or rehydrate them by soaking them briefly.
